Fiesta Friday

Sometime around last spring, Ryan and I started a semi-regular tradition of celebrating the delicious cuisine, beverages and music that our hispanic neighbors to the south have influenced. Not quite every Friday, but at least once a month it seems, we have Fiesta Friday nights. Last night, Dave and Juliejoined us for some delicious fajitas, tacos, margaritas y musica latina. We even cooked with some of our home grown organic vegetables/herbs including hot peppers, onions & scallions, cherry tomatoes, epazote and Dave & Julie's zucchinis. (Oh yeah, and that's Scarborough beef, too, thanks to Marc and Pam's hard work on the ranch.) Unfortunately our bell peppers weren't quite fully grown enough to throw in the mix (...but I am currently making quinoa stuffed mini-peppers with the ones that got knocked off too soon by the dogs).
Also, we only spoke Spanish the whole night. (well, okay, so the extent of our spanish speaking might have only consisted of the few Spanish words we rattled off randomly. El Banyo. Cerveza. Biblioteca. Fajita. etc.)P.S. I apologize. My absence from posting lately is due in part to the following: An awesome birthday weekend in Silverton, CO; a great two weeks in Ohio: Cleveland for cousin, Rebecca's wedding, and to spend time with family from afar that was in town, including Katie and parents from England, as well as my great aunt from Brownsville, Tia Chave; and Columbus for a great visit with friends and co-workers there; Omaha for Dustin's wedding; a visit here from Ma and Pa Bell; a couple fun days in Scottsdale with Julie who was there for a seminar; and an overnight in beautiful Mancos, CO. Now that I'm back to posting, what of all that do you want to hear more about!?
