We had a great weekend in Breckenridge, CO with Ohio and Michigan friends, new and old. Believe it or not, though I took my camera, I did not take a SINGLE picture. We drove up Thursday and made it across Vail pass just as a storm was rolling in and getting bad. Everyone arrived safely Thursday night and we all awoke to 10-12 in. (and still snowing) of fresh powder for skiing! Almost everyone skied or boarded and it was a great day. A few of us went to a great Mexican restaurant, called Mi Casa, that I had learned of through the Gluten-Free Girl's blog, whose husband is from Breckenridge. They had a special gluten free menu (glooooten-freeeee!) and I got some scrumptious fajitas de camaron. Sweet caramelized onions, perfectly roasted poblanos, and simply seasoned meaty shrimp on a soft and chewy corn tortillas...needless to say, i ate too much.
As for the evenings, let's just say there was a lot of, um, enjoying delicious beverages involved. Due to said delicious beverages, only a few people made it to the ski slopes Saturday. The rest of us relaxed, enjoyed some delicious food, and basketball playoffs at...Fatty's! Yep, many of us spent most of the afternoon at this restaurant/bar that felt more Irish pub than pizzeria (uh, but maybe that was due to all the Irish Car Bombs being ordered). At first glance, the menu was all pizza, fried bar food and sandwiches; but I was pleasantly surprised to be able to get some delish tuna salad to put on my own g-f bread, and some homemade chicken vegetable soup that was sans gluten as far as I could discern. The best part was really the name of the place, and as a result...I had to get a T-shirt!
To top off the day, thanks to our newly purchased metal Radio Flyer disc sled, and a trip to City Market for their 50% off sleds (only $3 ea.!), 5 of us had a blast on the town sledding hill. Ryan started a trend off to the side as he built a ramp and soon our sled hill became all the envy of the rest of the kids. We all caught some nice air before wrecking ourselves upon landing. (I could have gone without that last run...I think it got voted worst wreck of the day, and I have a large bruise on my backside to prove it.) Evening brought another enjoyable night of delicious beverages and dance parties.
Alas, armed with advil and gatorade, we all headed home our separate ways on Sunday morning.

megan, that coconut cake recipe looks delish, and coincidentally julie sent me an email about the epicurious feature on g-f stuff with that very recipe, too. i guess that means i should make the cake! (unfortunately Basha's-our one and only grocery-doesn't sell coconut flour nor almond flour. maybe i could grind coconut and almonds to make flours? any ideas if that would work? well, we're headed to Flagstaff soon anyway)
